Cajun Icelandic Haddock with Roasted Sweet Potatoes
Forget the lemon and butter. With its mild, slightly sweet flavour,
haddock is meant for Cajun spices. Pairing it with sweet potatoes
creates a sweet and spicy dish that will set your seafood options
apart from the rest.

- 4 x 8-10oz Icelandic Haddock Fillets (product #21005355), thawed
- 2 sweet potatoes, peeled and cut into chunks
- 15 mL fresh parsley, chopped
- 15 mL olive oil
- 950 mL baby spinach
- to taste cajun spice, fine grain
- 15 mL butter
- 60 mL white wine
- medium red onion, sliced
- Coat sweet potato in olive oil, and season with salt and pepper. Roast at 400°F (200°C) for 15 minutes, or until tender.
- Heat butter in a pan, and sauté spinach and red onion. Finish with white wine, salt and pepper.
- Season haddock with Cajun spices. Heat oil over medium heat, and pan-sear the fillets.
- Line a baking sheet with parchment paper. Place haddock on the sheet, and finish in the oven.
- Divide vegetables into 4 servings. Plate and top with haddock. Serve with lime wedges.
