Rhode Island Style Popcorn Shrimp

Ingredients

Main:

  • 20 ea Breaded Popcorn Shrimp
  • 1 cup Banana Peppers
  • 2 tbsp Curly Parsley minced
  • 1 cup Marinara Sauce
  • 1/2 Lemon sliced into wedges
  • 1/2 cup Curly Parsley for garnish

For the Creamy Chipotle Dip:

  • 1 cup Greek Yogurt Yogurt
  • 1/4 cup Chipotle In Adobo chopped
  • 2 tbsp Lime, juice
  • 2 tbsp Honey
  • 1 tsp Kosher Salt

  1. For the Creamy Chipotle Dip: Add all ingredients to a medium sized bowl, mix well and reserve under refrigeration.
  2. Prepare Shrimp: Cooking Instructions From Frozen: To Deep Fry: Preheat fryer to 350°F and fry for 2 1/2 - 3 minutes. Note: Cook to an internal temperature of 145°F minimum.
  3. Toss the fully cooked Popcorn Shrimp in a large bowl with the minced parsley and banana peppers. Serve on a large plate with the prepared marinara sauce and creamy chipotle dip on the side. Garnish with parsley sprigs and lemon wedges.
