Baja Fish Stick Tacos

  • 12 each WG Golden Crunchy Breaded Alaska Pollock Stick, 1 Oz. , CN, MSC
  • 12 each Flour Tortilla, small "street style" tortillas
  • 3 cup Romaine, shredded
  • 1 1/2 cup Salsa, preferred brand
  • 3/4 cup Ranch Dressing
  • 3/4 cup Guacamole
  • 1 1/2 cup Shredded Mexican Cheese Blend
  1. Prepare the Fish Sticks according to the package instructions: Cooking Instructions from Frozen To Bake: Place frozen sticks on a lightly oiled sheet pan. Convection Oven: Preheat oven to 375 degrees F and bake for 9 - 11 minutes. Conventional Oven: Preheat oven to 425 degrees F and bake for 14 - 16 minutes. Cook to an internal temperature of 155°F minimum.
  2. Prep the "Ranchamole": In a small bowl combine the ranch dressing and guacamole together and stir well to combine. Refrigerate until ready to use.
  3. Assemble Tacos: Build tacos beginning with the flour tortillas and adding approximately 1/4 cup of shredded lettuce followed by 2 tbsp. of prepared salsa and 2 tbsp. of shredded Mexican cheese. Top each with a fully cooked Crunchy Breaded Pollock Stick and drizzle with ranchamole to finish.
