Beer Battered Hake Tacos

Main Ingredients:
- 4 ea Cape Hake Beer Battered Portion
 - 4 ea Flour Tortilla
 - 2 oz Sour Cream
 - 2 oz Green Cabbage, julienne
 - 1/2 tsp Kosher Salt
 
For the Pico de Gallo:
- 1 ea Beefsteak Tomato, chopped
 - 2 tbsp Cilantro, chopped (no stem)
 - 1 tbsp Jalapeno, brunoise
 - 1 tsp Kosher Salt
 - 1 ea Lime, zested & juiced
 
- Rub the half teaspoon of kosher salt into the julienne cabbage and allow to sit in a bowl while you prepare the rest of the dish.
 - Prepare the Hake according to the package cooking instructions.
 - For the Pico de Gallo: Add the tomato, onion, jalapeno, salt, lime juice and zest to a small bowl. Stir well and reserve for service.
 - To Finish: Warm or lightly grill the flour tortillas. Lay out the tortillas on a flat work surface and divide the cabbage equally between them. Add a fully cooked portion of Hake to each taco, top with approximately 1/2 ounce of sour cream and a few tablespoons of pico de gallo per taco.
