Buffalo Mac n’ Cheese with Pollock Bites and Buffalo Sauce Drizzle, CN

Ingredients
Preparation
  • 180 each Breaded Alaska Pollock Bites CN
  • 4# Shell Pasta, or other similar shaped pasta
  • 1 gallon Prepared Cheesy Pasta Sauce
  • 2 quarts Frozen Peas
  • 2 cups Buffalo Sauce
  1. Cook the pasta shells according to their package instructions. Strain, rinse and toss lightly in a small amount of vegetable oil to prevent sticking.
  2. prepare the Breaded Alaska Pollock Bites: TO BAKE: Place frozen fish bites on a lightly oiled baking pan. CONVECTION OVEN: Preheat oven to 375°F and bake for 13-15 minutes. CONVENTIONAL OVEN: Preheat oven to 400°F and bake for 15-16 minutes
  3. In a large pot or rondeaux gently heat the cheesy pasta sauce, whisking occasionally, until warmed through. Add the fully cooked pasta shells, frozen peas and mix well.
  4. Serve approximately 2-3 ounces of prepared shells and cheesy sauce topped with 6 fully cooked Breaded Pollock Bites. Drizzle with approximately 1 ounce of buffalo sauce if desired.
