Shrimp Sushi

Shrimp Sushi is a delicious and simple Japanese appetizer.
Ingredients
| 1 tray | 1 tray | Mirabel Sushi Ebi, cooked, peeled & deveined tail-on, thawed |
| 1 L | 4 cups | Japanese sushi rice, cooked and seasoned with sushi vinegar |
| 15 mL | 1 tbsp | prepared Wasabi paste |
Method
Take approximately ½ oz of rice and press into a small mound.
Pick up a shrimp with the other hand and season interior with a light coating of wasabi.
Place rice mound onto shrimp and press lightly with index and middle fingers
Roll sushi over so that shrimp faces up and return to former position.
Press sushi with index and middle finger, turn around, and press again to finish the Sushi.
Serve Shrimp Sushi with additional wasabi, soy sauce and pickled ginger.
