Pancetta Encrusted Baked Oysters

Impress your guests with our Pancetta Encrusted Oysters!

Ingredients

2020High Liner Foodservice Signature IQF Oysters on the Half Shell, thawed
85 g3 ozpancetta, diced
33green onions, chopped
15 mL1 tbspolive oil
175 mL3/4 cupfresh bread crumbs
125 mL1/2 cupfreshly grated Parmesan cheese
7 mL1-1/2 tspgrated lemon zest

Method

  1. Loosen Oyster meat, leaving in shells. Place on baking sheet.
  2. Saute pancetta in skillet until browned.
  3. Add green onions and cook briefly.
  4. Remove from heat and toss with remaining ingredients.
  5. Top each Oyster with about 1 tbsp (15 mL) crumb mixture.
  6. Bake at 450°F (230°C) for 8 to 10 minutes or until golden.
  7. Serve immediately.
