Pancetta Encrusted Baked Oysters

Impress your guests with our Pancetta Encrusted Oysters!
Ingredients
| 20 | 20 | High Liner Foodservice Signature IQF Oysters on the Half Shell, thawed |
| 85 g | 3 oz | pancetta, diced |
| 3 | 3 | green onions, chopped |
| 15 mL | 1 tbsp | olive oil |
| 175 mL | 3/4 cup | fresh bread crumbs |
| 125 mL | 1/2 cup | freshly grated Parmesan cheese |
| 7 mL | 1-1/2 tsp | grated lemon zest |
Method
- Loosen Oyster meat, leaving in shells. Place on baking sheet.
- Saute pancetta in skillet until browned.
- Add green onions and cook briefly.
- Remove from heat and toss with remaining ingredients.
- Top each Oyster with about 1 tbsp (15 mL) crumb mixture.
- Bake at 450°F (230°C) for 8 to 10 minutes or until golden.
- Serve immediately.
